Chosen as the muse of this month’s special menu at Opera, Girolle (Chantarelle) is a wild mushroom which cannot be cultivated. It grows in deciduous and coniferous forests and acid soil. Acclaimed for the herby and slightly peppery flavour which makes them ideal for sauces, it is also excellent in meat dishes. Don’t miss your chance to experience its earthy yet delicate hint at our Italian kitchen this month.
